Peach Bread Pudding

Who doesn't like happy endings? Over the weekend, I gave not only myself but also my sad loaf of bread a happy ending by making some bread pudding. I merrily measured, mixed and baked for under an hour and had a delicious homemade bread pudding for dessert after dinner !
Delicious tips: Add some fruit slices(peach, mango or whatever rocks your boat). Always eat bread pudding with a scoop or two of vanilla ice cream!

12 slices of small whole wheat loaf bread (or any left over bread)
4 small eggs, lightly beaten
1/4 cup evaporated milk
1/4 cup low fat milk
1 tsp cinnamon
 2 tablespoons brown sugar plus 2 tablespoons for topping
1 tsp vanilla extract
6 peach halves, sliced
1/4 cup butter


1. Butter up a glass pie dish. Pre heat the oven to 375F.
2. Cut up the bread slices into 1 inch squares. (Optional: Remove the crusts.) Set aside.
3. In a bowl mix together the eggs, milk, cinnamon, sugar and vanilla extract.
4. Arrange the cut up bread and peaches in the buttered pie dish. Cut up the butter into small cubes and spread on top of the bread. 
5.  Pour the milk mixture on top of the bread.
6. Let the bread soak for a few minutes.
7. Sprinkle 2 tablespoons brown sugar on top of the bread. 
8. Bake for 30 minutes or until the custard is set.

Enjoy with a scoop of vanilla ice cream!
