Quick Meatloaf

Quick  Meatloaf

This meatloaf is truly a comfort food for me. This is so easy to prepare but delicious and filling! I normally serve this with bread and a side of apples and onions (sauteed). But this also tastes great with mashed potatoes and green beans.


1/2 kilo ground round
1/4 kilo lean ground pork
8 tomatoes, cubed
2 pieces medium onions, minced
2 cloves of garlic, minced
1 stalk of celery, minced
2 pieces toasted bread, crushed
1 piece of egg, lightly beaten
1/4 cup milk
1 tsp dried parsley flakes
1 green bell pepper ,diced (optional)
1/2 tsp salt
1/4 tsp black pepper
1/4 cup ketchup

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Saute garlic , celery and onions, Let cool..
  3. In a bowl, mix meats, tomatoes, sauteed onions, celery and garlic, bread, egg , milk, parsley flakes,salt, and pepper. Remember not to over mix to avoid having a 'tough' meatloaf.
  4. Mold the mixture gently in a loaf pan.
  5. Spread the ketchup on top of the mixture to coat.
  6. Bake in the oven for 45 minutes or until cooked through.
  7. Drain the fat, if needed,
  8. Let cool.
