Sticky Orange Cinnamon Rolls

I felt adventurous today, so I baked some cinnamon rolls--this time using some yeast for leavening. The rolls came out so soft and moist!

1/2 cup milk
1/2 cup buttermilk(I used 2% milk plus 1 tbsp vinegar. Set aside for 5 minutes to let the vinegar work its wonder!)
1 tbsp honey
2 1/4 tsp active dry yeast
1 egg
1 Tbsp coconut sugar + 1 tbsp white granulated sugar
1.5 tsp salt
1/2 tbsp vanilla extract
4 Tbsp butter softened
2 1/2 cups all purpose flour

1. Combine the milk and buttermilk. Heat the milk to a lukewarm.Pour milk in your mixing bowl. Add the yeast and honey. Set aside for at least 5 minutes until it becomes bubbly.
2. With the paddle attachment, mix in low the egg, sugar, salt, vanilla and butter.
3. Add in the flour 1/2 a cup at a time.
4. Change the paddle attachment to dough hook and  knead for 5 minutes.
5. Turn the dough onto a floured surface and knead for a few seconds. Form a ball.
6. Put the dough into a lightly oiled bowl. Let the dough rise for 2 hours in a warm area.

2 medium oranges
1 tbsp orange juice or more (just enough to make filling spreadable--too much juice will make the spread too runny))
1/2 cup + 1/4 cup coconut sugar
2 tsps cinnamon
6 tbsps  + 1/4 cup butter

1. Zest the oranges.
2. Mix 1/2 cup sugar with the orange zest. Add the cinnamon and orange juice. Set aside.
3. Melt 1/4 cup butter and pour it in your baking pan. (I used a 9 inch cake pan). Sprinkle 1/4 cup coconut sugar in your baking pan. Set aside.
4. Get your dough and flatten it out using a rolling pin.
5. Spread 6 tbsps of butter on the dough.
6. Spread the cinnamon-orange mixture.
7. Roll the dough into a log. Pinch close the edge of the dough.
8. Slice the dough roll into 8 pieces.
9. Arrange them in your baking pan with some allowance for the dough to expand.
10. Let the dough slices rise again for an hour.
11. Preheat the oven to 350 F. Bake the rolls for 25 minutes or until the tops are golden brown.
12. As soon as the rolls are done, invert the pan onto a plate. Cool for a few minutes.
Enjoy with a steaming cup of coffee!
