Potato Salad

I love making this potato salad whenever we have hotdogs/sausages! Hope you'll love it too!

1/2 kilo of baby potatoes
salt and pepper, to taste
2 Tablespoons olive oil
1/2 Tablespoon whole grain mustard
1 Tablespoon balsamic vinegar
1/2 piece of small onion, minced
1 Tsp dried parsley
1/2 Tsp dried thyme
2 Tablespoons olive oil based mayonnaise
2 Tablespoons cream cheese

1. Wash and halve the baby potatoes. Boil them for at least 15 minutes or until soft. Make sure you season the potatoes with salt and pepper. Cool the potatoes slightly by running water on them, then drain right away.
2.  In another bowl, whisk together all the ingredients. Pour the dressing to the potatoes and toss the potatoes. Enjoy!
