Vegetable Biryani Rice



After tasting the Vegetable Biryani in a surprise luncheon with my sister in a nearby Indian Resto, I went home thinking of how to replicate that dish. So here's my version:

1 onion, chopped

2 cloves garlic, minced

1 medium carrot, cubed

1/4 cup green peas

1 cup long grained rice(jasmine rice would be better!)

2 1/2 cups water

1 tsp curry powder

1 tsp turmeric powder

1/4 tsp chili flakes(optional)

1 tablespoon olive oil

1 chicken broth cube, crumbled

In a pan saute the onion and garlic until fragrant. Set aside. In a rice cooker, combine rice, water, carrots, peas, onions and garlic mixture, turmeric, curry and broth cubes. Cook until rice is done. I served this with grilled milkfish and loved the combination!
